My children love pancakes...usually smothered in the butter and honey, or something similarly sweet. Now that we're on a health kick, I've been on the hunt for a healthier version of pancakes so that the kids can still enjoy them...but without all of the processed white flour and butter. Here's a recipe I came across on pinterest that not only tastes great, but gives your children a good serve of dairy and grains. They've got the big thumbs up from Seth and Eme, and I know your kids will love them too.
Cinnamon pancakes
Makes 9 | Calories per serve: 87
You will need:
6 egg whites
1 cup rolled oats, dry
1 cup low-fat cottage cheese
2 teaspoons sugar
1 teaspoon cinnamon
1 teaspoon vanilla
Here's how:
1. Place all ingredients into a blender, and blend until smooth...scraping down the sides with a spatula to ensure all of the ingredients are mixed well.
2. Heat a large non-stick pan, and spray with non-stick cooking spray.
3. Pour 1/4 cup of batter onto the pan. When the surface starts to bubble, flip them over and cook until golden brown.
4. Repeat with the remaining batter, spraying the pan as needed. Makes about 9 pancakes.
These pancakes are nice and filling, and taste extra delicious with some fresh berries on the side. Enjoy one or two for morning tea, dessert, or pack them in your child's lunch box for a little treat.
