From my kitchen | Tuna Pie

More and more often, I find myself referring to recipes my mum used to make when I was a child. I have this ratty old notebook where I've written down family recipes. It's covered in food spills, and the pages are yellowing, but it's my favourite cookbook of all. This was one of the recipes my mum experimented with when we first got a microwave (what a miracle machine that was...it revolutionised cooking in our home), and I've tweaked it a little to bring it up to date.  I remember this dish being so delicious, so I thought I'd introduce it my kids too...

Christeen's Tuna Pie
Serves 4 | 323 calories per serve

You will need:
  • 185g tuna in springwater, drained and flaked
  • 3 eggs
  • 250g low fat cottage cheese
  • 1 medium brown onion, chopped
  • 2T low fat mayonnaise
  • 2T gherkin relish
  • 100g low fat grated cheese
  • 2T breadcrumbs
  • 2 tsp parsley flakes
Here's how:
  1. Gently mix together tuna, eggs, cottage cheese, onion, mayonnaise and gherkin relish in a bowl.
  2. Pour mixture into microwave safe pie dish, and spread out evenly.
  3. Top with grated cheese, breadcrumbs and parsley flakes
  4. Cook in microwave on medium heat for 19 minutes.
  5. Remove from microwave and place under the grill until cheese is golden.
  6. Serve with steamed vegetables or garden salad.
Notes:
  • This pie is delicious served hot or cold, making it a perfect pie to serve for dinner, and pack the leftovers for lunch.
  • The serving size above refers to four adult serves. We cut our pie into smaller pieces to feed the children.
